"Black (Swan)" Truffle Quesadillas for Oscar Night

Recipe: "Black (Swan)" Truffle Quesadilla

Serves: 4


1 red bell pepper, julienne
½ white onion, julienned
6-8 button mushrooms, sliced
2 garlic cloves, minced
1 jalapeño, diced (optional)
1 tablespoon vegetable oil
4 cups frozen or fresh huitlacoche (Mexican black truffle)
4 6-inch or 10-inch flour tortillas
4 ounces fresh grated sharp cheddar cheese
2 tablespoons butter



1. Sauté peppers, onions, mushrooms, garlic and peppers (if using) in vegetable oil over medium heat until aromatic and translucent. Add huitlacoche and cook for 5 minutes. Set aside.

2. Top each tortilla with cheese and filling.

3. Heat butter in medium sauté pan over medium heat and sear until tortilla is golden brown and cheese melts. Serve immediately with sour cream, guacamole and black tortilla chips.
