I am thinking about my next batch, which I think will be a wormwood ale. Does anyone have experience with wormwood? I've read it's super bitter...

sorry, I've never tried it. I've heard it provides a harsh, one-dimensional bittering.

I haven't heard of any one using it in the modern time although I am sure someone somewhere has done it.   I know that it was once used, as where many other things, as a bitternig agent instead of hops.


I do believe that if you do make it, you are required to drink it in the presence of little green fairies.

ha! yes Matt, that's what I read too, hence I want to try it. We will see what happens. I'll keep you guys posted.
Try Piccolo Birrifico's Chiostro, they spice theirs with artemisia absinthium.

Use a trappist yeast to add even more complexity and uniqueness to a spicy brew.
